Blueberry Muffins

When blueberry having offer last weekend, my dear husband
bought it without hesitant. He knew that I would need it for my
cake (so sweet of him). But I had enough of Fruity Pastry Cake
for the moment, cos I have bake 4 such cakes over 2 weekends.
So in order not to let the berries rot in fridge, I go thru my file
and decided to bake this 'To Die For Blueberry Muffins'. This
muffin has always well-like by my family. Hope it is the same
to you too..

Ingredients:
190 gm all-purpose flour
150 gm castor sugar
3 gm salt
9 gm baking powder
80ml vegetable oil
1 egg
80 ml milk
145 gm fresh blueberries
Topping
60 gm caster sugar or brown sugar
90 gm all-purpose flour
3 gm ground cinnamon
60 gm Butter, cubed
A pinch of salt
Methods:
1. Preheat oven to 200C.
2. Combine 190gm flour, 150gm sugar, salt and baking powder.
Set aside.
3. Add egg into milk and combine with oil.
4. Pour the wet ingredients into flour mixture. Stir to mix well.
5. Fold in blueberries.
6. Fill muffin cups to 2/3 full, and sprinkle with *crumb topping
mixture.
7. Bake for 20 - 25 minutes in the preheated oven, or till done.
* To make crumb topping :
1. Mix together 60gm sugar, 90gm plain flour, 3gm cinnamon,
60gm butter, a pinch of salt. Mix with fork and sprinke
over muffins before baking.

Chocolate Cream Cheese Cake

I got this recipe from myculinaryjournal quite some time
ago. It has been sitting in my file till today that I decided
to clear my Philadelphia cheese which I bought some
time back. The texture is rather moist too. But it required
quite a long baking time than it was stated in the recipe.
It took me about 1hr30 mins to bake. Result is very
good. Everyone likes it very much, will definite bake
this again.

Recipe
Ingredients A:
250g cream cheese
60g castor sugar
1 egg
Ingredients B:
180g butter (I use 150g)
150g castor sugar
3 eggs
3 tbsp cocoa powder
120g self-raising flour
1 tsp baking powder
Method:-
1. Beat ingrediten A till light and fluffy. Set aside.
2. Ingredients B, cream butter and sugar. Add in eggs
one at a time. Add in combined dry ingredients (Flour,
cocoa powder, baking powder). Mix well.
3. Pour half chocolate batter into 7" square tin. Then pour
in cream cheese mixture. Pour the remaining portion
if chocolate batter.
4. Baked in oven at 180 C for 1hr 30 mins.
5. Cool well and store cake in the fridge.

White Chocolate & Nuts Cookies

Believed me or not. I got this recipe from a kindergarten boy, Moses.
He has given me a few pieces to try, and goodness! A young boy like
him can bake so well! I asked him if he is willing to share his recipe
with me and he happily obliged. Good boy! Haha....

Recipe:
Ingredients
A:
250 gm butter
125 gm soft brown sugar
B:
2 eggs
1 tbsp vanilla essence
C:
350 gms plain flour
1 tbsp soda bicarbonate
(I find the taste of soda too strong, should it be 1 teaspoon?)
1/4 tbsp salt
D:
180 gm of white chocolate, chopped coarsely
100 gm almond nibs (roasted)
Method
(Preheat oven at 170C.)
1. Whip ingredients A together till white and fluffy.
2. Add egg, one at a time. Mix well before another egg.
3. Whip the mixture till creamy, then add vanilla essence
4. Add in ingredients C and D. Whip mixture till well combined.
5. Use a teaspoon to scoop a cookie size and place on greased tray.
(Place apart, not too close)
6. Bake for 20 to 25mins
7. Leave cookies to cool before storing.

Fruit Pastry Cake Again!

Yes, I made this again. Simply too good to resist. This time, I
added strawberries to it. Unfortunately, the strawberries are
sour, but it blend well with the cake :)

Fruit Pastry Cake II

I baked one round 9" and one square 8" cake. The cakes
came out so well that I decided to bring one cake to my
office to share with my colleagues. Everyone in office was
'wowing' and complimenting on such a nice bake done.
Can't denied that it boost up my confident level :) Will
sure bake some more to share with my parents this coming
weekend too...

Fruit Pastry Cake I

This cake was highly recommended to me by hearty-bakes.
Looking at the nice bakes by her, I could imagine the fruity
aroma lingering in the air. I immediately book marked it and
buy the necessary ingredients needed for the cake. I followed
the recipe closely as not wanting to waste my fresh blueberries.
And whats more, I am baking 2 cakes at one go. Thanks to
my Ariston maxi oven.

Paper Sponge Cuppies

I have been MIA for long time. Busy, busy, busy...
Finally settled in new home with my new oven built. Wanted so much to bake something, but simply do not have time and energy to do anything. Reading fellows baker's blog is the greatest pleasure and mind relaxing for me during this period. Wished I could have ample strength and energy to start baking that moment.

To warm up my new oven, I have chosen Paper Sponge Cuppies from hearty-bakes .Texture is indeed very very soft and sweetness is just nice. I could have poured too much batter into the papercup, ended up with the cake rising too high and cracked...Nevertheless, thanks Jess for sharing this great recipe.
