Birthday Cakes for Daughter's Friend

"Mummy, can you bake 2 birthday cakes for my friend?" Daughter asked.

"OK." I replied.

"I want a Monkey cake and Elephant cake" she happily said.

"???..What!!" Thinking your mum is super mum? She really

think so highly of me, can do whatever she requested....

'OK, I try.' Not confident if I can do it, but just try....

So this is the two birthday cakes that I produce...

Cotton Cheese Cake

A simple cotton cheese cake to serve my friends when they were
at my new home. I transformed it to a simple birthday cake with
some oreo biscuits decor when knowing one of the girls turning
11 that week. This came a surprise birthday treat to her and
hope she has a simple but memorable birthday.

Serikaya Cake (steam)

Another very soft and moist steam cake. Original cake recipe
can be found in y3k . Try it out...
Below recipe I did some slight changes to suit my taste.

Ingredients

A: 230g butter
1/2 tsp vanilla essence
5 eggs

B: (sieved together)175g plain flour
1 1/2 tsps double-action baking powder

C: 140g condensed milk
150g kaya
125g Horlicks
80g black treacle (replaced by Gula Hitam Browning)
200ml evaporated milk
some macadamia nuts (chopped)

Method:
1. Line and grease a 9" round cake tin. Heat up steamer.
2. Beat butter and vanilla essence in a mixing bowl
until creamy. Add in eggs one at a time.
Gradually add in ingredient (B) and ingredient (C)
alternately until well-combined. Pour into prepared tin
and sprinkle with nuts.
3. Steam for 1.15hr to 1.30hr or until skewer comes out
clean when inserted into cake's centre.

Steam Moist Chocolate Cake

The weather has been very warm, but it does not stop me

from baking chocolatery cake. Instead of baking it in

oven, this cake call for steaming. I guess steaming cake

will not be as 'heaty' as oven baked cake?

This cake was indeed moist and soft. It was recommended

to me by one of my baking friend, Yew Yen. Thank you

for sharing this great recipe :)

Ingredients:

185g butter

250g fine sugar

200ml evaporated milk

2 eggs

125g plain flour

70g cocoa powder

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp vanilla essence

Methods:

1. combine sugar, evaporated milk, vanilla essence and butter in a saucepan.

Stir over low heat till sugar dissolved and butter has melted. Remove from heat.

2. Add the beaten eggs into the slightly cooled mixture and stir till well mixed.

3. Sift flour, cocoa powder, baking powder and soda into a large bowl.

4. Add eggs mixture over the flour. Stir till well mixed.

(Batter should be runny).

5. Lined and greased a 9 inch baking tin

6. Pour batter into baking tin and place into a steamer.

7. Cover the top of tin with a piece of aluminum foil.

8. Steam over medium heat for 45 mins.

9. Cool the cake in pan before turning out.

fresh blueberry. Too bad, my girls do not like scones, poor

mummy here has to swallow about 24 scones.....Luckily

managed to get rid some by giving colleagues and friends :)

Tiramisu...this cake has been sitting in my bake list for long.
Since the day I had learnt this cake from Richard, I had bought
some of the ingredients from him then. Finally I decided to
bake this cake for my dear R's birthday today. Though the alcohol
in the cake was not suitable for children, but my girls still
had 2 small pieces each. And they requested me not to put
alcohol the next time, so they can eat more....Upon request,
I will soon bake another non-alcohol tiramisu cake for them...

Blueberry Muffins

When blueberry having offer last weekend, my dear husband
bought it without hesitant. He knew that I would need it for my
cake (so sweet of him). But I had enough of Fruity Pastry Cake
for the moment, cos I have bake 4 such cakes over 2 weekends.
So in order not to let the berries rot in fridge, I go thru my file
and decided to bake this 'To Die For Blueberry Muffins'. This
muffin has always well-like by my family. Hope it is the same
to you too..

Ingredients:

190 gm all-purpose flour

150 gm castor sugar

3 gm salt

9 gm baking powder

80ml vegetable oil

1 egg

80 ml milk

145 gm fresh blueberries

Topping

60 gm caster sugar or brown sugar

90 gm all-purpose flour

3 gm ground cinnamon

60 gm Butter, cubed

A pinch of salt

Methods:

1. Preheat oven to 200C.

2. Combine 190gm flour, 150gm sugar, salt and baking powder.

Set aside.

3. Add egg into milk and combine with oil.

4. Pour the wet ingredients into flour mixture. Stir to mix well.

5. Fold in blueberries.

6. Fill muffin cups to 2/3 full, and sprinkle with *crumb topping

mixture.

7. Bake for 20 - 25 minutes in the preheated oven, or till done.

* To make crumb topping :

1. Mix together 60gm sugar, 90gm plain flour, 3gm cinnamon,

60gm butter, a pinch of salt. Mix with fork and sprinke

over muffins before baking.

Chocolate Cream Cheese Cake

I got this recipe from myculinaryjournal quite some time
ago. It has been sitting in my file till today that I decided
to clear my Philadelphia cheese which I bought some
time back. The texture is rather moist too. But it required
quite a long baking time than it was stated in the recipe.
It took me about 1hr30 mins to bake. Result is very
good. Everyone likes it very much, will definite bake
this again.

Recipe

Ingredients A:

250g cream cheese

60g castor sugar

1 egg

Ingredients B:

180g butter (I use 150g)

150g castor sugar

3 eggs

3 tbsp cocoa powder

120g self-raising flour

1 tsp baking powder

Method:-

1. Beat ingrediten A till light and fluffy. Set aside.

2. Ingredients B, cream butter and sugar. Add in eggs

one at a time. Add in combined dry ingredients (Flour,

cocoa powder, baking powder). Mix well.

3. Pour half chocolate batter into 7" square tin. Then pour

in cream cheese mixture. Pour the remaining portion

if chocolate batter.

4. Baked in oven at 180 C for 1hr 30 mins.

5. Cool well and store cake in the fridge.

White Chocolate & Nuts Cookies

Believed me or not. I got this recipe from a kindergarten boy, Moses.
He has given me a few pieces to try, and goodness! A young boy like
him can bake so well! I asked him if he is willing to share his recipe
with me and he happily obliged. Good boy! Haha....

Recipe:

Ingredients

250 gm butter

125 gm soft brown sugar

2 eggs

1 tbsp vanilla essence

350 gms plain flour

1 tbsp soda bicarbonate

(I find the taste of soda too strong, should it be 1 teaspoon?)

1/4 tbsp salt

180 gm of white chocolate, chopped coarsely

100 gm almond nibs (roasted)

Method

(Preheat oven at 170C.)

1. Whip ingredients A together till white and fluffy.

2. Add egg, one at a time. Mix well before another egg.

3. Whip the mixture till creamy, then add vanilla essence

4. Add in ingredients C and D. Whip mixture till well combined.

5. Use a teaspoon to scoop a cookie size and place on greased tray.

(Place apart, not too close)

6. Bake for 20 to 25mins

7. Leave cookies to cool before storing.

Yes, I made this again. Simply too good to resist. This time, I
added strawberries to it. Unfortunately, the strawberries are
sour, but it blend well with the cake :)

Fruit Pastry Cake II

I baked one round 9" and one square 8" cake. The cakes
came out so well that I decided to bring one cake to my
office to share with my colleagues. Everyone in office was
'wowing' and complimenting on such a nice bake done.
Can't denied that it boost up my confident level :) Will
sure bake some more to share with my parents this coming
weekend too...

Fruit Pastry Cake I

This cake was highly recommended to me by hearty-bakes.
Looking at the nice bakes by her, I could imagine the fruity
aroma lingering in the air. I immediately book marked it and
buy the necessary ingredients needed for the cake. I followed
the recipe closely as not wanting to waste my fresh blueberries.
And whats more, I am baking 2 cakes at one go. Thanks to
my Ariston maxi oven.

I have been MIA for long time. Busy, busy, busy...
Finally settled in new home with my new oven built. Wanted so much to bake something, but simply do not have time and energy to do anything. Reading fellows baker's blog is the greatest pleasure and mind relaxing for me during this period. Wished I could have ample strength and energy to start baking that moment.

To warm up my new oven, I have chosen Paper Sponge Cuppies from hearty-bakes .Texture is indeed very very soft and sweetness is just nice. I could have poured too much batter into the papercup, ended up with the cake rising too high and cracked...Nevertheless, thanks Jess for sharing this great recipe.

Getting ready for my last creaming lesson with Richard Goh.
After attending his lessons for so many months, not only I learn
lots of baking skills n tips, I have made lots of friends there. Its
really good to see everyone coming to class sharing their bakes
and also sharing where to get good bargains for baking essential
stuffs. No deny that everyone is enjoying learning and chatting
there. I definitely going to miss everyone and hope that we will
meet up some other days.

Below is the fondant roses I rushed to made last night. Recalling how
to mould these roses which I had learnt 2 years ago. Though the
roses is not in perfect shapes, but still this is hand-made.:)

Today lesson we learnt how to cut out a Number or Alphabet. As you
can see, our piping skill is improving and everyone is showing their
talent and creativity on the cakes.

Lesson 3 was rather interesting. We have to choose a cartoon character that we want to
draw on our cake. We draw the outline of the cartoon character on the baking paper, then
using melted coating chocolate to pipe along the outline. Put in fridge for 3 mins to set the
chocolate and overturn the baking paper onto our cake. Slowly remove the baking paper
and the chocolate will stick onto our creamed cake. Then now we used the piping gel to
mix with colours that we desired and filled up the cartoon. That was easy and fun.

My friend shared with me this cake recipe found from http://gracekitchencorner.blogspot.com/. Seeing the video clip on how the sponge cake being made, indeed make it easier for us to understand. I bake 2 sponge cake since my creaming lesson with Richard needs 2 cakes. Result of the cake was indeed tall and spongy.

Once we completed from stage 5 of Richard's baking class, we managed to gather enough pupil to sign up for his creaming class. This is a hands-on lesson that we will have to bring a sponge cake,
butter cream, baking tools, etc..
Most of us had a wonderful afternoon, learning how to pipe different patterns using same nozzle and decorate our cake. I am pleased to meet fatmum in the class. Though we have 1st met one another, but it seems that we had know each long ago....LH, 我们一起加油吧！

Above cake done by me using Chiffon cake bought from cake shop. Since chiffon has a hole in centre, my fellow classmates were kind enough to scrape off the top layer of cake skin, and stuff it into my chiffon, so my chiffon is a full round cake now. The left cake was decorated by me. Richard finds it too plain and beautify it with coloured cream (right). When brought home the cake, my girls were so fascinated over it. Keep saying Mummy so clever....haha...

A surprise birthday cakes baked by my children and their friend. They took out my recipes file and decided on the butter cake. My elder girl trying hard to recall how I beat the eggs and butter and stirred in the batter using hands. I guessed they must have had a Happy Time baking this cake (Luckily I'm not at home seeing the baking process). They used the left over whipped cream to cover the butter cakes and ransacked my cupboard which I store my baking stuffs and used them to decorate the cakes. Till now, I still don't have the heart to open the cupboard. Told my helper to pack properly 1st before I open it. Overall, I would say a 1st time baker without my guidiance, the result is good. Most importantly, its the thought that counts....Thank you my Beautie, Sweetie, Cutie and their friend, Kerrie.....What a lovely cakes you had baked for me.....

My family is not a big fan for mooncakes. So I tried to do this
agar agar mooncake, thinking its something new and they would
love it. I used happyflour recipe to make the
above. After trying, my kids still do not like it. They rather have
the plain agar agar than this with special filling (lotus). I guess I
would not tried this for them anymore.

Children's Day Celebration '09

What an tiring day yesterday. I bake mooncakes in the morning, followed by Cupcakes, Muffins and Marble Cake (4 items in a day). Started work from 9.00am till 12 midnight. My goodness! I should have bake mooncake days earlier. I thought that the Mooncake festival still have a week more to go. Silly me...

As usual, I will bake cakes for my gals for the Children's Day celebration in school. Going thru the recipes and decided to make easy muffins n marble cakes for my younger two..

As for my elder gal, I had long planned to bake cupcakes for her who will be doing PSLE soon. This cupcakes is to inspire her to aim for A*.....(am I too ambitiou?..haha..)
Nevertheless, I wished her 'All The Best! GO GO GO!'

This pudding was recommended by my friend, Linda, and she even helped me to get it. This is my 1st time trying this brand. Din know that it was so yummy. My girls and their friends have helped themselves to many cups of pudding. One packet yields about 38 mini cups. Now they are bugging me to make other flavours that I bought. Their friends even ask my girls to bring it to school if they did not come to my house.

* It is so silly of me using agar agar mould to make pudding....haha...It was so soft that it could be not dislodge with the shape intact. In the end, I have to use a spoon to scoop it.

Ingredients for Pastry
120g butter, chilled
200g plain flour
1/4 tsp salt
10g icing sugar, sifted
1 egg

Filling
1 onion, chopped
80g Buttom mushroom (sliced)
100g ham

125g milk
100g whipping cream
2 small eggs
120g Edem Cheese (shredded)
Salt & black pepper to taste

Method

1. Place butter, salt and icing sugar in a mixer bowl and mix slowly till
resembles breadcrumbs. Add beaten egg at low speed and mix.
Refrigerate for 30 mins.

2. Fry chopped onion till fragrant. Add mushrooms and ham till lightly brown. Set aside.

3. Mix milk, cream, eggs, salt and pepper till well blended. Set aside.

4. Preheat oven 180 deg C.

5. Half bake the shell for 15 mins on the middle rack.

6. Spoon filling into pastry. Pour milk mixture to about 90% full.

7. Bake for 30min or until golden brown.

My elder girl has requested me to bake for her, her all time favourite cookies, to celebrate her birthday tomorrow. Since I did not bake any cake for her, I have to grant her wish. So I went out just to pick up butter, flour and cornflakes to make this cookies specially for her. She was so happy and offer to help me too. While making, she can't help smiling and give me several pecks on my oily cheek....

The cookies were done within 2 hours and all packed into container for her to bring to school to share with her classmates.

Ingredients:
300g Self-raising flour
1 Egg
240g Butter
180g Fine Sugar
1tsp Vanilla Essence
1 big box of cornflakes (325g)
Cherry for decoration (optional)

Methods:
Mix butter, sugar, egg till sugar melts.
Add vanilla essence
Add flour slowly (bit by bit)
Add in crushed cornflakes.
Make it round and place a bit of cherry in the middle.

Bake in 160deg C for 30-40 minutes or till golden brown.

Since young, I have been seeing my mum learning baking and
cooking.Whenever she was backed from CC, we will get to taste
all the nice food. When i have my own family, i started to
bake and cook. Since then, i got to know a few baking kakis.
I was inspired by their creativity and willingness to share.

Durian Puff

Using the balance durian cream left over from sponge cake, I make this cream puff using Richard Goh's recipe. The puff deflates once out from oven. I guess it could be me opening the oven a few times to put in another tray of puff to bake
and to check if it is brown enough. Will take note on this and bake again next time.

Creative Culinaire

First lesson in 'Creative Culinaire' for bread foundation. It was a fruitful afternoon for me and my friend, Linda. It was quite a long hour lesson from 1-6pm. We weigh, knead, shape the dough and bake it. We did Cheese Twists, Pandan Ampang Red Bean, Chocolate Spirals,Sausage Rolls & Amond Twists.. It was a
very fun process. Though our last tray of buns was left forgotten in the oven by instructor, but it still taste good with a little 'chao da'. Now we are looking forward to our next lesson on Saturday.

Using Richard Goh's sponge cake recipe for this durian cake. I have been baking a number of sponge cakes and started to get the hang of it. Folding flour using hand has become easier than before. The cake texture is soft and fluffy too. Adding balance durian fresh into whipping cream and spread in between the cake. The sweetness for both durian cream and cake is just right. Within minutes, half the cake is gone.

Apple Pie/Blueberry Fresh Cream Cake

Due to my baking lesson with Richard is on Thursday afternoon, I have been taking half day leave to attend eversince I started work in July. In order not to miss his lessons which will continue to Stage 5, I make my way to Ngee Soon Central Comunity Club to continue my baking journey with him. The facility in Ngee Soon CC is definitely uncomparable to Yio Chu Kang CC. The classroom is very small and quite run down. Due to it is a weekend class, it was jam pack. I have no choice but to beg Richard to allow me to squeeze into this class. I had already missed one lesson for this stage 2 baking. So will have to wait for make-up if he starts new lesson in otherCC.

Richard is in happy mood today. He did an extra recipe by showing us using 'Optima Premix Flour'. This premix flour gave a very very soft texture cake. He is also so generous to show us how to make different pattern on the swissroll. Like - Pokka Dot, Leaf, Spider Web. Its so amazed to see such an simple cake can be designed to many patterns ; )

First time baking fresh cream cake. The texture of the fresh cream

is not smooth enough.So has to slice some strawberry to decorate

on the side of the cake to cover up this unevencream. Overall, the

cake taste good with blueberry fillings. My girls like this cake cos

it is not too much of cream.

Richard has given us this extra 'bonus' simple recipe. Indeed, it is very simple and taste very
good. Using the same tart recipe for 'Pandan coconut tart'. Simply melt the coating chocolate
and add in this 'Feuillgine' - flakes. Put it in the ready tart and refrigerate it. That's it.
